Frozen in time. Our product, our traditions. Did you know the vegetables you are about to enjoy is actually processed when its fresher than any corn available from many farmer's stands? Farm stand and other fresh produce is often harvested many days before you prepare it. We move our produce from field to freezer quickly (Usually within eight hours) and lock in the nutrients and flavor that vegetables retain only during the first few hours after harvesting. It would be easier if we took more time, however, one of the Cope traditions, like that of many others in the Pennsylvania Dutch country, has been to serve the sweetest and most tender vegetables around. We have a feeling that this is also your tradition.
